Lettuce Wraps
3-4 Boneless, skinless chicken breasts OR Lean ground turkey or beef
1 head lettuce
1/4 cup cashews
1 bunch of scallions
Teriyaki Sauce
Trim or drain any fat off of your meat, cut into small pieces
Pan fry (with Pam Spray or Olive Oil) OR steam until done
Add in cashews (crushed)
Add in chopped scallions
Add in about 1/4 cup Teriyaki Sauce
Stir everything together
Gently tear apart lettuce to make wraps (large enough to hold the chicken mixture)
Add a large spoonful or two of your mixture and wrap it!
